Mizutaki, a specialty of Hakata in Kyushu, is a hotpot chicken dish that is healthy, rich in collagen and fibre. At Torikin, the stock is made daily from Sakura chickens and boiled for more than 6 hours, with no additives at all. The end result is a pale, white stock of natural collagen and a lighter, more refined taste, as compared to other collagen-enhanced hotpots.
Other delights of Kyushu are available in the form of the piping hot Tomato Okonomiyaki and Hakata Tonpei Yaki. Served up sizzling on special earthenware plates with an infra-red effect to draw out the taste of the ingredients evenly, these signature side dishes are a flavourful must-try. With chicken being the main highlight of the restaurant, it can also be enjoyed in other forms such as the Miyazaki Chicken Nanban - succulent pieces of chicken deep fried and eaten with creamy tartar sauce.
